Abstract: Ultrasound‐assisted extraction (UAE) method proves to be more effective compared to traditional extraction methods. In the present study, response surface methodology (RSM) was used to determine the optimal process parameters for extracting polysaccharides (U‐MCP) from jaboticaba fruit using UAE.
