Modern nutrition science focuses on the creation of innovative technologies and increase the assortment of finished products with directional changes in chemical composition and properties with a view to implementation in the food industry. The problem of imbalance of PUFA in a diet of people is investigated. It is proposed to use perspective vegetable sources of oilseeds. Considered the composition and properties of products of processing of vegetable materials of the Russian, which includes -3 PUFA. On this basis, the prospects for the use of PUFA in food production are determined. The formulations of fat products with the necessary structuralrheological and physic-chemical parameters that are balanced by the ratio of saturated, monounsaturated and polyunsaturated fatty acids are designed.

Russia has a significant reserve to improve the efficiency of agricultural production (by 3-5 times) and the potential to grow the turnover of the industry through the introduction of digital technologies and modern digital platforms for management at various levels agricultural production. Through digital transformation in the feed industry, the following challenges are to be addressed in a comprehensive way: improving productivity; Increased export revenue Maximizing the value of the industry's businesses Increased economic growth in industries (spheres); Creating an effective sales chain from manufacturer to consumer; Integration into related sectors of the digital economy; increasing the attractiveness of work in agriculture and increasing the incomes of agricultural producers. Digital technologies will in the near future become an integral part of agricultural culture, ranging from planting planning and automation of watering and digital crop modelling to the calculation of feed for farm animals, birds and fish. In the course of the research, the task was set to create a system of automated design of functional feeds: from the available resources of raw materials to make formulations of functional feeds that meet the specified requirements for their nutritional value and chemical composition. Based on the systems of automated design of the processes of production of functional feeds, we have a number of developed mathematical models, which allow realistic prediction of changes occurring in raw materials and finished Product. The automated feed design systems we develop and the mathematical modelling behind them can contribute to the digital transformation of the feed industry, as well as to the replacement of the feed industry domestic software.

At the same time, rapeseed meal has an increased nutritional value and is almost completely devoid of the shortcomings that are characteristic of rapeseed cake. However, a small amount of fat limits their use in feed for valuable fish breeds. During the manufacture of fat-and-oil products, fat waste and other products that have a certain feed value are formed. In particular, we are talking about fat processing - soapstock. The feed value of this product has been confirmed by numerous studies and large-scale feeding experiments conducted by the parent institutes of the Ministry of Agriculture and specialized organizations. The article presents studies of the possibility of introducing rapeseed meal enriched with soapstocks into feed for valuable breeds of fish, and also presents the dynamics of quality indicators of the starting production feed for sturgeon fish during storage in warehouse conditions. During the production of mixed fodder, the preparation and supply to the experimental department of the studied products were carried out through the line of cakes. Grinding of granules was carried out on a crusher with a sieve with holes with a diameter of 6 millimeters, a sheet thickness of 4 millimeters. The shredded meal was sent to the silage of the raw material warehouse and then to the naddozer bunker. The supply of loose enriched meal to the production building was similar. Analysis of the data obtained indicates that the introduction of rapeseed meal enriched with soapstock lipids into the feed does not change the quality and does not reduce its shelf life.
