Regional Risk Factors for Stomach Cancer in the FRG

Abstract: A multicentric, hospital-based, case-control study was conducted in high-and low-risk areas for stomach cancer in the Fedenl Republic of Germany, by which means a low intake ofdietary vitamin C (relative risk IRRI = 2.32, 95% confidence interval [CII 1.224A3 for lowest against highest quintile), noncentralized water supply (RR= 2.17, CI 1.14-4.13 against central water supply), refrigerator use for less than 25 years (RR = 1.33, CI 0.82-2.15 against more than 30 years), and the use ofspruce for smoking meat at … Show more

“…In some early studies the increasing use of refrigerators for food storage has been found to be in a negative correlation with the incidence of gastric cancer. 38,39 Indeed, before the time of refrigerators, fermentation technology was the most widespread method for food preservation and this is still the case in many undeveloped countries. Alcoholic fermentation, which is commonly associated with many fermentation processes, results under anaerobic conditions in the formation of acetal-dehyde.…”

“…In Germany /32/, stomach cancer risk was positively associated with private well water use compared with public supply use. In Colombia, well water use in the first 10 years of life was associated with an increased risk of stomach cancer precursor lesions /33/.…”

“…It is not clear whether excessive salt or the other compounds are responsible for an increased stomach cancer risk. Long-term use of a refrigerator has been hypothesized to decrease stomach cancer risk (e.g., [9,18,19]). There is no direct relation with stomach cancer, but refrigerator use may reflect a change in dietary habits such as increased fruit and vegetable consumption and a decreased consumption of salted and smoked foods.…”
