Reducing Food Waste Through Lean and Sustainable Operations: A Case Study From the Poultry Industry

Abstract: The growing need for solving the problem of food waste for tackling the survival of the planet and humankind is encouraging researchers to seek sustainable operations that alter the conventional methods that are currently in use in the food industry. Lean thinking has been used in this study to propose sustainable operations that incorporate social, economic, and environmental aspects and to handle the multidisciplinary and complex nature of reducing food waste. The value stream mapping methodology has been em… Show more

“…These data bring a huge concern, considering the need to rethink the forms of production and consumption due to the limitation of natural resources. According to [49], food waste is increasing worldwide, requiring urgent and necessary actions to mitigate this practice. In addition, challenges regarding food demand, due to the increase in the population on the planet, become increasingly urgent, putting a brake on food waste.…”

“…In the agro-industry, there is a need for global agriculture to increase its productivity by at least 60% by 2050 to meet food demand (Benyam et al, 2021). An alternative to soften this scenario would be to reduce food waste; once, approximate data indicate that 30-50% of food production is wasted for several reasons (Kazancoglu et al, 2021). Estimates point out that 28% are lost at the end of the production process, 22% are during management and storage, 17% are in the distribution market (wholesale) and 28% in final consumers (The Brazilian Agricultural Research Corporation-Embrapa, 2022).…”

“…They conducted a case study in poultry farms to present tools and techniques. Furthermore, Kazancoglu et al (2021) applied lean thinking by using value stream mapping (VSM) to eliminate food waste caused in the poultry sector. On the other hand, Real-Dominguez et al (2021) proposed a model that integrates two important lean tools, 5S and total productive maintenance (TPM), for productivity improvement in a poultry processing plant.…”
