“…The second important feature is that the walls of the cyclodextrins are hydrophobic, but the two rims (upper/narrow and lower/wide rim), which are trimmed with OH groups (primary and secondary OH groups, respectively), are hydrophilic. As a result, the exterior of these unusual molecules is hydrophilic, and the cavity is hydrophobic, which gives cyclodextrins the ability to accommodate hydrophobic molecules/moieties (solid, liquid, and gaseous compounds) inside its cavity. ,, This special feature of cyclodextrins accounts for a variety of beneficial effects and diverse applications in many areas (e.g., supramolecular chemistry, catalysis, drug carrier systems, food industry, and cosmetics) and industrial production on the thousands-of-tons scale.
