Quality Assessment of Young Sparkling Wines of Crimean Indigenous Grape Varieties

Abstract: Most domestic sparkling wines are made of traditional champagne grape varieties. However, indigenous Crimean cultivars could increase the output of high-quality original beverages if a proper technology was introduced.
