Changes in fauna and abiotic factors in estuaries are a consequence of their exploitation; thus, bivalve mollusks, as they filter, are widely used as environmental bioindicators. The aim of this study was to analyze the existence of seasonal variation in the concentration of total coliforms (TC) and thermotolerant coliforms (Ct), in addition to correlating the data obtained with the salinity and temperature in collection areas of Mytella falcata and the soft tissue cultivated in the Estuarine Complex of Cananéia. Two biweekly samples of water and tissue were taken, for 12 consecutive months, in nine cultivation areas of M. falcata. The analysis of the water samples showed that the Fisheries Institute, Mosquiteiro, and Itapitangui have high TC densities, with respective annual averages of 772.22, 592.67, and 563.75 most probable number (MPN).100 ml−1. The highest concentrations of TC and Ct occurred in the summer, in most areas. There was a decrease in both TC and Ct with increasing salinity. However, there was an increase in Ct with increasing temperature. The soft tissue showed TC densities from 9 to 26 MPN.100 ml−1 and Ct densities from 6 to 14 MPN.100 ml−1, displaying the highest counts in the summer. Places where coliforms were found in high concentrations could indicate contamination, because Ct do not support higher salinities for a long time. Practitioner Points The general mean was 77.64 (total coliforms) and 39.35 (thermotolerant) MPN.100 ml−1. Annual average (thermotolerant) exceeded the permitted Brazilian limit in five points. Higher concentrations of total and thermotolerant coliforms occurred in the summer. In mollusk's tissue, concentrations of thermotolerant were 6.30 to 26.16 MPN.100 g−1. Coliforms' MPN varied with increasing salinity and temperature.

Existe íntima relação entre saúde, ambiente e alimentação. Condições precárias de vida influenciam na saúde, inclusive na Segurança Alimentar e Nutricional. Objetivou-se avaliar os aspectos socioambientais relacionados com a Segurança Alimentar e Nutricional de quilombolas de uma Reserva Extrativista Marinha. No período de junho de 2014 a setembro de 2016 foi aplicada entrevista semiestruturada, com questões sobre o perfil socioeconômico das famílias e de infraestrutura da comunidade e coletadas amostras de água estuarina. Observou-se que 65,2% tinham as famílias chefiadas por mulheres, 56,5% possuíam ensino fundamental incompleto e 47,9% tinham a renda mensal de até um salário mínimo. O saneamento básico era precário, pois inexistia coleta de lixo e o esgotamento sanitário era a céu aberto em 91,3% dos domicílios. A contagem de coliformes totais e termotolerantes variou de 0,88 a 1,64 log NMP.100mL-1 e 0,72 a 1,55 log NMP.100mL-1 respectivamente, com valores acima do permitido no período chuvoso nos pontos 1, 2 e 3 para coliformes termotolerantes no 90o percentil. As condições precárias de saneamento básico, a contaminação microbiológica da água estuarina próxima aos domicílios e a baixa escolaridade dos moradores demonstraram a vulnerabilidade socioambiental da comunidade estudada, estando diretamente relacionadas com a Insegurança Alimentar e Nutricional.

Informal fish marketing is an important source of food and income for many families. However, it is also a public health issue, since the quality of fish can be compromised during marketing. The microbiological quality of fish sold in town fairs in the municipalities of the Bahia Reconcavo region, Brazil, was assessed to characterize isolates based on antimicrobial susceptibility and to investigate gene virulence. Samples of mullets (Mugil sp.), mussels (Mytella sp.), and mollusks (Anomalocardia brasiliana) were collected in town fairs in the municipalities of Cachoeira, Cruz das Almas, and Santo Antônio de Jesus.The presence of mesophylls, molds and yeasts, total coliforms, Escherichia coli, and Staphylococcus aureus was evaluated. E. coli and S. aureus isolates were subjected to antimicrobial susceptibility tests and the presence of the gene stx in E. coli isolates was investigated. Total coliforms and S. aureus ranged between 0 and 9.50 log CFU/g, while high counts of mesophylls, molds, and yeasts were detected. E. coli had greater resistance (76.8%) to amoxicillin and S. aureus had greater sensitivity to gentamicin. The stx gene was not identified in any of the samples studied. Results showed that some fish sold in the town fairs of the three municipalities possessed unsatisfactory microbiological quality, which may pose risks to consumer health, and may be vectors for the dissemination of bacteria resistant to different antimicrobial agents.
