Sun et al demonstrated that purple sweet potato color (PSPC), one type of flavonoid derived from purple sweet potato, ameliorates endothelium senescence by restraining ROS production and NLRP3 inflammasome activation, and then reduces atherosclerotic lesions in insulin-resistant mice 76 .
