Existe evidencia científica que demuestra la alta concentración de proteasas en las semillas de leguminosas(Abdala et al, 1999;Cruz de Carvalho et al, 2001).En lo que respecta al proceso de aislamiento de la fracción proteica, diversas investigaciones han propuesto distintas metodologías factibles(Eltayeb et al, 2011;Budič et al, 2016); sin embargo, no existe un método estándar de purificación.
