Cereals are the major source of energy to good health over the world. The major and minor cereals are consumed either processed and semi processed with addition of other food ingredients. The cereals contains nutrients like carbohydrates, proteins, minerals, vitamins, fat and some of cereals having good amount of dietary fibre (soluble and insoluble). Some cereals especially colored rice, colored wheat, colored maize and some millets having the functional bioactive components such as polyphenols, tocopherol, orzyzenol (antioxidants) and vitamins these cereals having functional properties and ultimately fight against diseases and prevent or control the some disease in body i.e. cardiovascular risk, reduces the risk of cancer, type-2 diabetes, hypertension, high blood pressure etc. The cereal is consumed with pulses and fulfils the requirements essentials amino acid and its availability. Functional foods are consumed around the world; each functional food has its significance unique properties like taste, aroma, texture, consistency and flavour. The food may be consumed fermented while some are non-fermented. Fermented cereals are increasing the vitamins B complex and some other nutrients.

In this study, new Imidazolidin-4-one [A1-A5] compounds were prepared by the reaction of schiff base compounds with alanine in ethanol. The prepared compounds were characterized by physical properties, UV-Vis, FT-IR and 1H-NMR spectral and C.H.N analysis. TLC checked the purity for these compounds. All compounds [A1-A5] were prepared by the traditional method (reflux) and microwave technology. It was found that using the microwave method gives better results in terms of less time and, higher yield. Antibacterial behaviors were investigated against a variety of bacteria, including Escherichia coli and Klebsiella pneumonia Gram (-) ve, Staphylococcus aureus, and Staphylococcus epidermidis Gram (+) ve. The laser efficacy of the compounds [A1-A5] was evaluated after they were radiated by laser for (10, 20, 30) seconds. As the melting point and color of the substances were determined, it was discovered that they were unaffected and did not disintegrate or polymerize. Using the Chem Draw Specialist 19.0 program, the stereoisomers of the prepared compounds [A1-A5] were examined at the lowest layer stage. Using the Chem3D 19.0 program, the heat of the formulation of the compounds [A1-A5] was also investigated.

As the demand for healthy products targeted to prevent or ameliorate bowel disease and digestive disorders of the intestinal tract is increasing, this review describes non-starch polysaccharides, such as β-glucan, arabinoxylan, galactomannan, fructan, and heteropolysaccarides from mucilages, as useful sources for adequate and tailor-made products aimed for regulation of the colon and wellbeing effects on the gut microbiota. Their monosaccharide composition, structure, molecular dimensions, physicochemical characteristics and growth stimulation of lactobacilli and bifidobacteria in the gut microbiota is reported. Arabinoxylan from wheat and rye grains is discussed as an ingredient for gluten and lectin-free bread and baked goods. Galactomannans from legumes and their partially hydrolysed products are presented as sources for specific healthy products against bowel disease and digestive discomfort. Commercial fructan products obtained from inulin, fructan of agave, and fructooligosaccharides are discussed in detail as a selective substrate for fermentation by health-promoting bacteria in the colon, such as lactobacilli and bifidobacteria. Structurally different heteropolysaccharides from mucilages of traditional medicinal plants, such as seeds from psyllium, flax, chan, chia, and basil or cladodes from Opuntia spp., are discussed as useful sources of dietary fibre, with prebiotic characteristics and digestive regulation in the intestinal tract as well.
