This article describes the efforts of the Institute of Nutrition of Central America and Panama (INCAP) to develop a relatively low-cost vegetable protein mixture suitable as a complementary food for infants and young children. As it turned out, the resulting product became popular with older children and adults, and its superior nutritional benefits were widely recognized by the population. This effort led to broader studies by INCAP of the nutritional quality of vegetable protein mixtures, including raw materials, processing to convert them into human-grade products, product formulation, and commercialization.

Incaparina is a high-quality protein vegetable food used in Guatemala. It was developed in the 1960s for children and other population groups with nutritional deficiencies. The original formula is still used as a commercial product, but both its ingredients and its micronutrient composition needed to be improved. Protein quality was improved, vitamin A content was reduced, and the contents of iron, B vitamins, zinc, and calcium were increased. The price of new Incaparina is still very competitive. In order to ensure the quality of this commercial product, a Seal of Nutritional Excellence was developed and is expected to be used by private firms.

Cottonseed protein has the potential to increase the world's food supply while decreasing the incidence of malnutrition among the world's hungry. Nutritionally, cottonseed flour compares favorably to other animal and vegetable protein sources, as it is low in fat and contains a substantial amount of high biological value protein. Animal studies, as well as human research, using gossypol-free glandless cottonseed flour have shown that cottonseed protein promotes growth, increased weight gain, and a positive nitrogen balance. Cottonseed protein food products have been shown to be a healthy addition to the diets of children, college-age women, and the elderly. With its light color and bland flavor, cottonseed has many uses in the food processing arena. Baked goods, snack foods and candy, as well as pet and livestock feed are just a few successful products developed utilizing cottonseed protein.
