Résumé -Aujourd'hui, 4 Français sur 10 consomment des aliments au soja. Les consommateurs les ont intégrés dans leur alimentation, sans bouleverser leurs habitudes alimentaires, parce qu'ils les considèrent naturels et sains. Les non consommateurs sont en attente de plus d'informations (origine géographique du soja et qualités nutritionnelles). La consommation est assez récente et devrait progresser dans les prochaines années. Les aliments élaborés à partir de la graine de soja fournissent des protéines de très bonne qualité nutritionnelle, des acides gras insaturés, des fibres, des vitamines et des minéraux. La graine de soja contient des isoflavones, dont une grande partie est éliminée lors de l'élaboration des aliments au soja (qui en contiennent 1 à 3 mg/g de protéine). La consommation actuelle d'aliments au soja est largement compatible avec l'apport maximal de 1mg/kg/j recommandé par l'Afssa en 2005. Le développement infantile avec les préparations à base de protéines de soja est comparable à celui observé avec celles à base de protéines de lait de vache ou avec le lait maternel, sur tous les paramètres étudiés (croissance, santé osseuse et fonctions métaboliques, reproductives, endocrines, immunitaires et neurologiques). Les aliments au soja semblent exercer un effet protecteur vis-à-vis du risque de cancer du sein (probablement lié aux isoflavones), surtout si la consommation est débutée avant l'adolescence. Chez les femmes ayant des antécédents de cancer du sein, l'alimentation peut intégrer les aliments au soja. Introduire des aliments à base de soja dans l'alimentation contribue aussi à maintenir la santé cardiovasculaire, du fait de leur effet favorable sur le taux de LDL-cholestérol, sur la fonction endothéliale, et potentiellement sur la tension artérielle. Today, 4 French people out of 10 eat soyfoods. Consumers have adopted them in their diet, without changing their habits, because they consider them natural and healthy. The non-users are waiting for more information (geographical origin, nutritional benefits). The consumption is relatively new and is expected to grow in the coming years. Soyfoods produced from soybeans provide high quality proteins, unsaturated fatty acids, fibres, vitamins and minerals. Soybeans contain isoflavones, much of which is lost during the production of soyfoods, which contain between 1 and 3 mg per g protein. The current consumption of soyfoods is largely consistent with the maximum intake of 1 mg/kg/day recommended by the Afssa in 2005. Infant development with formulas based on soy protein is similar to that observed with those based on cow milk or with breast milk, on all studied parameters (growth, bone health and metabolic, reproductive, endocrine, immune and neurological functions). With increasing preference for all-natural foods to those involving synthetic chemicals, native isoelectrically precipitated soy protein isolate (SPI) was prepared using amaranth (Amaranthus tricolor L.) lye (pH>12.5) and lemon extract, (pH<2.5) as natural, food-plant-based chemicals. Protein content (91.21 %), yield (43.62 %) and digestibility correlation amino acid score (0.77) were obtained and were comparable to those of SPI prepared using synthetic chemicals (NaOH and HCl). Methionine and cystein-s were significantly higher in the natural SPI while glutamine and serine were higher in synthetic SPI (p<0.01). Most of the determined minerals were higher in the natural SPI with potassium being the highest. Sodium was very high in the synthetic SPI. The rest of the minerals including phosphorus, iron and nickel, showed no significant difference. Anti-nutritional factors (trypsin inhibitors and phytic acid) were considerably lower in the natural SPI. Thus, a quality all-natural SPI can be produced using amaranth lye and lemon extract to address concerns regarding use of synthetic chemicals.

-The continuous world population growth induces a total protein demand increase based mainly on plant sources. To meet these global nutritional challenges, existing and innovative dry and wet fractionation processes will have to be combined to better valorise plant protein fraction from pulses and oilseeds. The worldwide success of soy protein isolates originate from the intrinsic qualities of soybean proteins but also from a continuous R&D effort since mid-twenty century. Therefore, the soy protein development model can be applied to protein isolates from diverse pulses and oilseeds meals as rapeseed which has already been recognised as novel food protein in Europe. To boost the delivery of plant proteins, agrofood-industries and academics must pool their respective expertise. Innovative and issue solving R&D projects have to be launched to better valorise pulses and oilseed proteins by (i) creating oil extraction processes which preserve native proteins structure; (ii) developing novel protein extraction processes from lab up to industrial pilot scale; (iii) producing plant protein isolates having comparable foaming, emulsifying or gelling functionality than animal; and (iv) generating hydrolysed proteins with high digestibility adapted to human nutrition. It is also essential to initiate research programs to innovate in wet and dry fractionations of plants or to design in vitro models to evaluate proteins digestibility and allergenicity. The increased awareness regarding plant protein valorisation resulted in the creation by agro-industries and academics of the open platform IMPROVE which propose a combination of competencies and equipment to boost market uptake of Plant Based Proteins.Keywords: Plant / proteins / fractionation / nutrition / functionality Résumé -Combinaison de technologies existantes et alternatives pour promouvoir les protéines d'oléagineux et de légumineuses dans les applications alimentaires. L'augmentation continue de la population mondiale provoque un accroissement de la demande en protéines végétales. Pour répondre au défi, il faudra mieux valoriser la fraction protéique des graines de légumineuses et d'oléo-protéagineux. Le succès des isolats protéiques de soja est dû à leur valeur intrinsèque et à un effort soutenu de recherche depuis les années cinquante. Ce modèle de développement peut s'appliquer aux graines de légumineuses et d'oléo-protéagineux. Déjà, les isolats protéiques de colza ont obtenu le statut Novel Food.
