Promising bioactive properties of quercetin for potential food applications and health benefits: A review

Abstract: Naturally occurring phytochemicals with promising biological properties are quercetin and its derivatives. Quercetin has been thoroughly studied for its antidiabetic, antibacterial, anti-inflammatory, anti-Alzheimer's, anti-arthritic, antioxidant, cardiovascular, and wound-healing properties. Anticancer activity of quercetin against cancer cell lines has also recently been revealed. The majority of the Western diet contains quercetin and its derivatives, therefore consuming them as part of a meal or as a food … Show more

“…The structure of flavonoids plays an important role in anti-inflammatory activity. For example Betulaceae , Fabaceae , Asteraceae and Apiaceae families are rich in quercetin, which extincts free radicals formed during cellular metabolism [ 36 ]; Asphodelaceae and Scrophulariaceae families contain luteolin, which presents anticancer properties and is associated with the induction of apoptosis and inhibition of cell proliferation, metastasis and angiogenesis [ 37 ], while the Fabaceae family is abundant in kaempferol, isoflavones and flavanols, which are known to act as antioxidants and anticancer and anti-inflammatory agents in various contexts [ 38 , 39 ].…”

“…Antioxidants are substances that protect cells from free radical damage, which is generated by highly reactive molecules in the body that create oxidative stress. Flavonols have been discovered to be powerful antioxidants capable of protecting cells from oxidative stress and lowering the risk of chronic illnesses such as cancer, heart disease, and diabetes [ 134 ]. Flavonols such as quercetin, kaempferol, and myricetin have been proved in vitro to effectively scavenge free radicals such as superoxide anion, hydroxyl radical, and peroxyl radical [ 69 , 125 ].…”

“…Liver fibrosis is a frequent complication of chronic liver illness and is defined by the buildup of extracellular matrix proteins, which can compromise liver function. Flavonols with antifibrotic characteristics [ 11 , 40 , 134 ], such as quercetin and catechin, have been discovered to limit the deposition of extracellular matrix proteins and diminish liver fibrosis. Flavonols have been discovered to modulate lipid metabolism and enhance lipid profiles, which can contribute to the development of fatty liver disease.…”

“…In this regard, quercetin (QR), chemically known as 3, 3′, 4′, 5, 7‐pentahydroxyflavone, is the most common polyphenolic flavonoid present in fruits and vegetables; this compound has a variety of health‐promoting effects in treating different disorders (El‐Nashar et al, 2015; El‐Nashar et al, 2017). Besides having antioxidant and strong metal chelating effects, QR also possesses neuroprotective qualities (El‐Nashar et al, 2023; Shabir et al, 2022). It significantly contributes to preventing neurodegenerative illnesses associated with oxidative stress, mitochondrial malfunction, neuroinflammation, and apoptosis (Grewal et al, 2021; Ishaq et al, 2022).…”
