Production, partial characterization and antioxidant properties of exopolysaccharide α-d-glucan produced by Leuconostoc lactis KC117496 isolated from an idli batter

Abstract: Exopolysaccharide (EPS) produced from Leuconostoc lactis KC117496 isolated from the naturally fermented idli batter has been reported earlier. Here, study aimed to optimize the carbon source to enhance the yield of EPS production, partial characterization and antioxidant activity of aD -glucan EPS. Among different disaccharides (sucrose, maltose, lactose) and monosaccharides (glucose, galactose and fructose), combination of sucrose and glucose at 2% showed highest EPS production of 4.55 g/L in MRS medium. The … Show more

“…The water solubility of the EPSs was attributed to their absorptive structure which can hold water through hydrogen bonds (Yang et al 2019). The WSI range of bacterial EPSs extends from 14.2 to 92.15% (Saravanan et al 2019;Vinothini et al 2019), so with a WSI exceeding 85% Leptolyngbya sp., EPSs are considered among the most water-soluble ones.…”

“…Glucan (500 μg/ ml) isolated from idli batter displayed significant antioxidant activity in DPPH (74%) and hydroxyl radical scavenging assays (97.8%). This ensures that the glucan has the promising future in food and pharmaceutical industry [98]. Two EPS fractions of acidic HePs rich in mannose and galactose produced by Weissella cibaria SJ14 showed strong antioxidant activity [99].…”

“…These are considered to be safer alternatives to the synthetic ones. In the recent years, many EPS from LAB have been studied for their antioxidant potential and prevention of oxidative damage 22 , 23 . Antioxidant potential and protective role of Weissella EPS have also been reported from a variety of EPS isolated from Weissella many strains like Weissella confusa EPSWWC, W. confusa OF126, W. cibaria GA44, W. cibaria YB-1, W. confusa W4 and W. cibaria SJ14 24 29 .…”
