The industrial production of bioethanol takes place through the fermentation process by the action of selected yeasts in a favorable environment generated by the high concentration of sugar in the must. For the process to occur properly, it is essential to minimize the presence and action of microbial contaminants, which enter the process compromising production. With the prospect of a growing increase in bioethanol production, the sugar-energy sector seeks to minimize contamination using antibiotics. This use has been questioned due to environmental concerns and limitation of the dry yeast trade by leaving residues and in this way, the use of plant extracts becomes attractive. In this sense, aqueous and hydroalcoholic extracts of Byrsonima intermedia, a plant from the Brazilian cerrado, were evaluated and revealed the ability to inhibit bacteria isolated from fermentation processes. The hydroalcoholic extract showed MIC ranging from 2.5 to less than 0.156 mg.mL-1, the aqueous extract showed less variation (between 1.25 to 0.312 mg.mL-1) and was used in the fermentation process. In the fermentative process the aqueous extract presented a gain of 10.06% of fermentative efficiency. The results obtained accentuate desirable qualities of the aqueous extract for use in production units and may be an alternative for microbial control in fermentation processes to produce bioethanol.

O etanol é um combustível alternativo e renovável produzido a partir da fermentação da sacarose encontrada na cana-de-açúcar. Apesar da aplicação de técnicas de esterilização a contaminação por microrganismos indesejáveis pode acontecer no processo fermentativo. o que pode acarretar baixa produtividade e a diminuição da qualidade do produto. A indústria como forma de controlar essa contaminação faz uso de antibióticos, porém esses deixam resíduos dentro das células de levedura o que impossibilita sua venda posterior e seu uso na alimentação animal. dado a importância na indústria de se encontrar um agente com ação antimicrobiana adequada, o presente trabalho visa contribuir com os conhecimentos em busca de agente antimicrobiano comercial com extrato vegetal que seja eficiente e eficaz. O objetivo do trabalho através de revisão bibliográfica e testes laboratoriais foi avaliar a possível ação antimicrobiana do extrato de quebra-pedra como alternativa no controle de infecção no processo de fermentação. visto que o quebra-pedra é eficiente para tratar infecções bacterianas em humanos faz com que o trabalho questione se o extrato de quebra-pedra terá o mesmo benefício para a indústria. após análise de solubilidade o presente estudo concluiu que o uso do extrato de quebra-pedra em forma seca encapsulada é inviável para a indústria por ser praticamente insolúvel e não permitir a verificação da ação antimicrobiana.

The microbiological control of the industrial production process for obtaining bioethanol has always been a challenge because it is a process involving producer microorganisms (selected yeast) and invaders (contaminants), where invaders must be controlled so that this Control does not interfere with the action. of the producers. The uncontrolled presence of contaminants can make production unfeasible due to competition for raw material in addition to the production of inhibitory substances, changes in the ideal conditions of the process, consumption of the product, among other situations. In this sense, bacterial contaminants isolated from the material of the yeast treatment vat from three different production units in the region of Jaboticabal and also from a fermentation process carried out at Fatec Jaboticabal were tested separately and together for sensitivity to extract of Myrcia bella obtained by aqueous and hydroalcoholic extraction. It was possible to verify that the isolates from fermentation processes were sensitive, and it is important to continue the study to evaluate the use during the fermentation process as a potential way of using this species in the microbiological control of the process to optimize the production of bioethanol.
