Process Technology for the Production of Micronutrient Rich Red Palm Olein

Abstract: Crude palm oil (CPO) is the richest natural source of carotenes that are destroyed in the conventional processing. There is a growing demand for nutritional products containing bioactive constituents externally fortified or preserved through modified process. A commercially viable process for the production of red palm olein (RPOn) rich in carotenes, tocols and sterols has been developed at pilot scale. The process developed involved neutralization of CPO followed by crystallization at controlled rate of cooli… Show more

“…Several methods have been developed to isolate/retain palm carotenoids and other phytonutrients from palm oil (Mayamol et al 2007). Malaysian Palm Oil Promotion Council (MPOPC) has developed molecular distillation based process for the preparation of phytonutrients retained red palm olein from low acidic palm oil (Nagendran et al 2000).…”

“…By incorporating n-3 fatty acids into palm oil by interesterification, one can produce a product which also has the good anti-oxidant properties of palm oil (e.g. with high b-carotene and vitamin E contents [31][32][33].…”

“…The palm oil is fractionated, crystallized, and separated to obtain solid (stearin), and liquid (olein) fractions. Typically, these fractions are melted and degummed, then filtered and bleached to remove color, carotenoids, and odor, to produce a refined, bleached, deodorized palm oil (BDPO; Choo and other 1993; Faessler and others 2007; Mayamol and others 2007). BDPO is sold on the commodity markets.…”

“…Most commercial palm oil contains only trace amounts of carotenoids (USDA ARS 2011). However, RPO can be refined using more gentle processes and lower temperatures, so that it retains most of its carotenoids (Mayamol and others 2007). In fact, palm oil carotenoids are concentrated to provide PVA‐rich oils and supplements, such as Caritino.…”
