Bacillus cereus is widely distributed in different food products and can cause a variety of symptoms associated with food poisoning. Since ready-to-eat (RTE) foods are not commonly sterilized by heat treatment before consumption, B. cereus contamination may cause severe food safety problems. In this study, we investigated the prevalence of B. cereus in RTE food samples from different regions of China and evaluated the levels of bacterial contamination, antibiotic resistance, virulence gene distribution, and genetic polymorphisms of these isolates. Of the tested retail RTE foods, 35% were positive for B. cereus, with 39 and 83% of the isolated strains harboring the enterotoxin-encoding hblACD and nheABC gene clusters, respectively. The entFM gene was detected in all B. cereus strains. The cytK gene was present in 68% of isolates, but only 7% harbored the emetic toxin-encoding gene cesB. Antimicrobial susceptibility testing revealed that the majority of the isolates were resistant not only to most β-lactam antibiotics, but also to rifamycin. Multilocus sequence typing (MLST) revealed that the 368 isolates belonged to 192 different sequence types (STs) including 93 new STs, the most prevalent of which was ST26. Collectively, our study indicates the prevalence, bacterial contamination levels, and biological characteristics of B. cereus isolated from RTE foods in China and demonstrates the potential hazards of B. cereus in RTE foods.

Bacillus cereus is a common foodborne pathogen capable of producing cereulide and enterotoxin. Consumption of food contaminated with cereulide can even result in fatality. Bacteriophages are increasingly being utilized as biocontrol agents to combat specific pathogens in a variety of food products. However, there are currently no lytic phages available to target cereulide‐producing B. cereus. This study aims to isolate and characterize two novel phages, DC1 and DC2, and assess their potential for use in food substrates. These two phages possessed the widest host range among the reported lytic phages that target B. cereus. The whole genome analysis demonstrated that DC1 and DC2 belonged to the Tsarbombavirus genus of the Bastillevirinae subfamily, which is part of the Herelleviridae family. The one‐step growth curve analysis revealed that DC1 had a latent period of 30 min and a burst size of approximately 39 PFU (plaque‐forming units) per cell. On the other hand, DC2 exhibited a shorter latent period of 15 min and a larger burst size of 124 PFU per cell. Both phages had a burst period of 30 min. Furthermore, DC1 and DC2 displayed excellent stability within a wide range of pH levels and temperatures. After undergoing a brief phage‐soaking treatment, DC1 and DC2 effectively reduced the bacterial count in spiked food samples. Additionally, they inhibited the formation of biofilms and degraded already‐formed biofilms. Collectively, DC1 and DC2 exhibit great potential as biocontrol agents for the prevention and control of B. cereus contamination in foods.

Mercury (Hg) is a highly toxic heavy metal and Hg‐resistant indigenous bacterial isolates may offer a green and cost‐effective bioremediation strategy to counter Hg contamination. In this study, a potent Hg‐resistant bacterium was isolated from the forest soil of a bird sanctuary. Identification using matrix‐assisted laser desorption ionization‐time of flight mass spectrometry depicted the isolate as a strain of Bacillus tropicus, validated by morphological, biochemical, and molecular studies. The isolate demonstrated biological Hg removal efficiency and capacity of 50.67% and 19.76 mg g−1, respectively. The plasmid borne resistance determinant, merA, encoding mercuric reductase, was detected in the bacterium endowing it with effective Hg volatilization and resistance capability. A Fourier‐transform infrared spectroscopic comparative metabolic profiling revealed the involvement of various functional groups like –COOH, ‐CH2, ‐OH, PO4− and so on, resulting in differential spectral patterns of the bacterium both in control and Hg‐exposed situations. A temporal variance in metabolic signature was also observed during the early and mid‐log phase of growth in the presence of Hg. The bacterium described in this study is the first indigenous Hg‐resistant strain isolated from the Uttar Dinajpur region, which could be further explored and exploited as a potent bioresource for Hg remediation.
