Liquid smoke contains various compounds that can be grouped into groups of phenolic compounds, acids, and groups of carbonyl compounds. These compound groups act as antimicrobials, antioxidants, flavoring, and coloring agents. Because liquid smoke can act as an antimicrobial and antioxidant, liquid smoke can be used as a preservative. Liquid smoke is classified as grade 3, 2, and 1 according to its properties and applications. The results of this research are phytochemical analysis for all variations of liquid smoke, showing the content of phenols, flavonoids, tannins, glycosides, and steroids/triterpenoids. The characterization results of various grades liquid smoke (3; 2; 1) respectively are yield (9.75% w/w; 60%v/v; 50.9%v/v), pH value (2.68; 2.46; 2.42), total acid (13.44%; 14.34%; 17.36%), specific gravity of (1.0499; 1.0435; 1.0421 g/mL), total phenol content (23.0186; 12.3135; 7.8879), Pb and Cd levels of 0.218; 0.207; 0.202 mg/L and 0.019; 0.010; 0.008mg/L. Identification using UV-Vis and FTIR spectrophotometry. Isolation using thin-layer chromatography showed that it contained flavonoids with an Rf value of 0.31, 0.31, 0.29. The conclusion was that various grades liquid smoke can be produced with appropriate characteristics and have high total phenol potential.

In this study, there were two groups, namely liquid smoke of kusambi and liquid smoke of coconut shells with various treatments of adsorbent filtration with 3 replications. There are three kind of treatment for each liquid smoke groups, first is liquid smoke without filtration process with adsorbent, liquid smoke with zeolite adsorbent treatment, liquid smoke with silica adsorbent treatment, and liquid smoke with activated charcoal adsorbent treatment. Analysis of variance showed that different types of liquid smoke and different adsorbent filtration had a very significant effect (P0.01) on antioxidants, total acid, specific gravity, tar, phenol content, pH, salinity, TDS, total yield, L* and b* color, hedonic color and smokey scent in the resulting liquid smoke. Analysis of variance showed that the different types of liquid smoke had no significant effect (P0.05), but the filtration treatment with different adsorbents had a very significant effect (P0.01) on viscosity. And the analysis of variance also showed that the different types of liquid smoke and the filtration of different adsorbents had no significant effect (P0.05) on the color a* of the resulting liquid smoke. The differences in the types of liquid smoke and the treatment of liquid smoke filtration with adsorbents had a very significant effect (P0 .01) on antioxidant, total acid, specific gravity, tar, phenol content, pH, salinity, TDS, total yield, L* and b* color, hedonic color, and smoke aroma in the liquid smoke produced. However, the different types of liquid smoke did not have a significant effect on the resulting viscosity (P0.05) and the different types of adsorbents in the liquid smoke filtration process had a very significant effect on the viscosity (P0.01). Meanwhile, the different types of liquid smoke and the different types of adsorbents in the liquid smoke filtration process did not have a significant effect on the value of the color a* or the reddish color of the liquid smoke (P0.05).

Pengolahan kopi (Coffea sp.) melalui penggilingan akan menghasilkan limbah kulit kopi yang tidak termanfaatkan dan hanya ditumpuk di sekitar lokasi pengolahan. Kulit kopi (Coffea sp.) mengandung lignin dan selulosa yang dapat dimanfaatkan sebagai bahan pembuatan asap cair. Asap cair memiliki beberapa kegunaan diantaranya dapat diaplikasikan sebagai koagulan karet alam (lateks). Asap cair dihasilkan melalui proses pirolisis selama 6 jam dengan suhu ± 350◦C. Rendemen asap cair yang dihasilkan dari proses pirolisis kulit kopi sebesar 19,6% dengan karakteristik berbau asap, berwarna coklat kemerahan dengan berat jenis sebesar 1,007 ± 0,003 gr/mL, pH 3,62 ± 0,021, dan kadar asam total 9,75 ± 0,025%. Analisis menggunakan spektrofotometer FTIR menunjukkan adanya vibrasi gugus –OH, C=O dan C-O yang diduga berasal dari gugus karboksilat. Asap cair diaplikasikan sebagai koagulan lateks dengan konsentrasi (dalam v/v) yaitu 5%, 10%, 15%, dan 20% serta lateks murni tanpa perlakuan sebagai kontrol negatif dan asam formiat 2% (v/v) sebagai kontrol positif. Pada konsentrasi asap cair 15% waktu koagulasi lateks menunjukkan hasil yang hampir sama dengan penggunaan asam formiat 2%. Pada konsentrasi asap cair yang lebih tinggi yaitu 20% (v/v), proses koagulasi menggunakan asap cair lebih cepat dibandingkan dengan asam formiat 2% (v/v). Penggunaan asap cair dari kulit kopi pada proses koagulasi lateks mampu memperpendek waktu koagulasi serta menghilangkan bau busuk pada lateks namun mengubah warna lateks alami menjadi abu-abu. Berdasarkan hasil penelitian tersebut asap cair kulit kopi (Coffea sp.) dapat digunakan sebagai koagulan lateks untuk menggantikan asam formiat.
