“…On a global scale, the majority of inulin on the market is produced from the tap root of chicory ( Cichorium intybus , Cichorioideae), with an average degree of polymerization (DP) of 15–20, which is suitable for use as dietary fibre (Van den Ende et al, 1996). The tap roots of endive ( Cichorium endivia , Cichorioideae), great burdock ( Arctium lappa , Carduoideae) and the tuberous root of yacon ( Smallanthus sonchifolius , Asteroideae) also contain a high amount of short‐chain inulin, with an average DP of 3–7, and these are good candidates for sweeteners and prebiotics (Ishiguro et al, 2010; Lachman et al, 2004; Mariano et al, 2020). Mariano et al ., (2020) extracted FOS from Cichorium endivia roots and investigated prebiotic potential for Lactobacillus fermentum , L. paracasei , L. acidophilus and L. brevis . They found promising fermentation potential of Cichorium endivia and bacterial multiplication rate was even higher than commercial FOS.…”
