Potential application of domestic solar dryers for coriander leaves: Drying kinetics, thermal efficiency, and quality assessment

Abstract: Coriander (Coriandrum sativum L.) is a highly perishable crop with a shelf-life of a few days under refrigerated conditions. Solar drying is one of the economical, hygienic and eco-friendly methods of food preservation. During this study, fresh coriander was pre-treated in a solution of 0.1% magnesium chloride, 0.1% sodium bicarbonate and 2.0% KMS for 15 min before solar or open sun drying.

“…As antioxidants, antibacterial, antiviral, and anti-inflammatory compounds, flavonoids have been found to be beneficial for human health, as well as potential-reducing agents that protect from oxidative damage due to hydroxyl groups [80,81]. The retention of flavonoids in dried products is important, since they also function as free radical scavengers [82]. The interaction effect of the thickness of puree and drying method was non-significant (p > 0.05) on TFC, whereas the drying method had a significant (p < 0.05) effect on TFC.…”

“…The household sector is responsible for about 61% of global food loss and wastage followed by service and retail sectors (UNEP, 2021). In the past few years, several developments have been made in the field of solar drying (Dubey et al, 2022;Eltawil et al, 2012;Eustache, 2017;Ezekoye and Enebe, 2006;Haque et al, 2018;Kaur et al, 2023;Kumar et al, 2023b;Saleh and Badran, 2009;Singh et al, 2006;Ugwuoke et al, 2019) but none of them got the acceptance among household users. The lower thermal performance, higher heat losses, larger drying time and the obvious intermittent operating behavior are some of the limitations of the solar dryers developed for domestic and small-scale applications (Manchanda et al, 2019;Shimpy et al, 2019).…”
