Porous wheat gluten microparticles obtained by electrospray: Preparation and characterization

Abstract: Currently, microporous polymer materials are being studied extensively due to their attractive properties which allow for a wide potential of applications, such as prolonged-release systems (PRS). The objective of the present work was to prepare and characterize porous microparticles of wheat gluten (WG) using the electrospray technique. The effect of the physicochemical parameters of the solution and electrospray technique parameters on the morphology and size of the materials obtained was studied. For all of… Show more

“…In this section we will discuss the various collector types and their influence on the ES manufacturing of MPs. In the ES process, there are several ways of collecting the MPs, such as on stainless steel plates [34], stainless steel plates coated with an aluminum foil [28], aluminum foils [40], an aluminum plate [63], beakers or Petri dishes containing different solvent such as MeOH or EtOH [39], Polysorbat 80 surfactant (Tween 80) [39], phosphate buffer or citrate buffer [35], solutions containing 2% (w/v) CaCl 2 , etc. [64].…”

“…Viscosity. The viscosity of all solutions was analyzed on a Modular Compact Rheometer (MCR-102; Anton Paar, Germany), using concentric cylinder geometry at a constant shear rate of 50 (s −1 ) at 25°C (Tapia-Hernández et al, 2018b). Measurements were performed in three independent assays.…”

“…This behavior is due to the relationship between the mass and the inertial force (Fρ) of zein solutions. The concept of inertial force is defined as the fluid resistance to changes in conditions either at rest or in motion (Jaworek & Sobczyk, 2008;Tapia-Hernández et al, 2018b).…”

“…Among the four necessary parts, the spraying head is the most important section because it is a convergent point of electrical energy and fluid (or fluids), and it has the important role of guiding the working fluid (or fluids) into the electrical field for implementing an electrospraying process [ 59 , 60 , 61 ]. Thus, it is common sense that the working processes are often termed by the structures of the spraying heads.…”

“…Although 1 × 10 −3 mg/mL methylene blue was added into the core fluid and the working fluid showed a blue color, the collected particles still had almost a white color.
