“…Saponin levels can be reduced of roughly 50% with respect to the initial content in the plant if an appropriate pH for coagulation and washing is used (Livingston et al, 1979). Similarly, coumestrol and other different soluble polyphenolics found in alfalfa can be reduced of roughly from 30 to 75% if the final protein preparation is washed with ethanol or mixtures of water/ethanol (Rambourg and Monties, 1983), or water/2-propanol (Hernandez et al, 1991). These results are confirmed at the industrial scale: in the previously mentioned Pro-Xan process the measurement of the coumestrol content in different preparations has revealed large differences according to the operational conditions chosen and has indicated the best choice for reduction to acceptable values (Knuckles et al, 1976).…”
