Polyphenol-Enriched Protein Oleogels as Potential Delivery Systems of Omega-3 Fatty Acids

Abstract: Omega-3 polyunsaturated fatty acids (n-3 FAs) are essential nutrients and are considered effective in improving human health. Recent studies highlight the importance of the combination of n-3 FAs and polyphenols for limiting the oxidation of n-3 FAs and exhibiting synergistic beneficial effects.
