“…The content of polymeric procyanidins, determined by the phloroglucinol method, was 147.28 mg/100 g fresh puree. Kołodziejczyk et al (2013), in their study on sour cherry pomace extract, also suggested that polymeric flavan-3-ols are present in higher concentrations than their monomers. Table 2 presents the degree of polymerization (DP; number of flavan-3-ol units), which modulates the physicochemical properties of polymeric procyanidins.…”

“…The presence of these compounds in the DSC was confirmed by Wojdyło et al (2014a) and also in freeze-dried sour cherries by Zorić et al (2014). The main anthocyanin identified in the DSC was cyanidin-3-glucosyl-rutinoside [m/z=757], and its presence was reported by Kołodziejczyk et al (2013). Additionally, some other derivatives of quercetin were noticed in all the DSCs.…”

“…One of flavan-3-ol fractions identified in DSC was (+)-catechin. These are the typical compounds occurring in sour cherries (Wojdyło et al 2014b;Kołodziejczyk et al 2013).…”

“…Similar to grape marc, sour cherry pomace became the subject of the scientific studies and its rich phenolic and anthocyanin content were reported. Kolodziejczyk et al (2013) showed that cyanidin-3-glucosylrutinoside and neochlorogenic acid are the predominant anthocyanin and hydroxycinnamic acid, respectively, found in sour cherry pomace. Simsek et al (2012) reported that epicatechin is the major phenolic compound in the sour cherry pomace.…”
