PM2.5 in Indoor Air of a Bakery: Chemical Characterization and Size Distribution

Abstract: In current literature, studies on indoor air quality mostly concern environments such as hospitals, schools and homes, and less so on spaces producing food, such as bakeries. However, small- and medium-sized bakeries are typical and very common food production spaces, mostly in Southern Italy. Considering this, the present study investigated size trends of the aerosol particles during bakery working activities and the indoor particulate matter PM2.5 chemical speciation at the same time, in order to characteriz… Show more

“…65 The presence of markers like levoglucosan was associated with source wood burning in another study inside an Italian bakery. 66 The indoor concentration of pollutants can be multifold higher than their typical outdoor concentration. A range of pollutants trapped indoors in high concentrations can lead to interesting physicochemical processes that can be captured and understood only with simultaneous measurements of gaseous species and PM metrics.…”

“…Outre la farine, lors de la cuisson du pain avec des fours alimentés avec du bois ou du gaz butane, certains gaz et particules sont rejetés dans l'atmosphère des boulangeries. Les employés de ces structures font partie de la catégorie des travailleurs exposés à de fortes concentrations de particules émises par la combustion du bois (Ielpo et al, 2020). La combustion de la (Lima et al, 2020).…”

“…In this study, a new system architecture derived from the integration of a low-cost laser-based network detector for pollutants interfaced with a more sophisticated layout mounted on an unmanned aerial vehicle (UAV). Zooming in our cities, this special issue presents air quality investigations relating to indoor (in a bakery) environment investigation [10], as well as the relationship between outdoor and indoor pollution concentration [11].…”
