Phytochemical characteristics, antioxidant, and health properties of roasted and unroasted Algerian argan (Argania spinosa) oil

Abstract: The aim of this work was to investigate the physicochemical, nutritional and antioxidant properties of traditionally pressed edible (roasted argan kernels) and beauty (unroasted argan kernels) Algerian argan oil. Oxidative stability and the quality of oils (acidity, peroxide index, K232, and K270) were slightly affected by roasting process. But, any case, none of the analyzed oils surpassed limits established by Moroccan norms and were labeled as “extra virgin oil.” In addition, the better antioxidant capaciti… Show more

“…The oil characterization results show that OO is rich in chlorophylls and carotenoids compared to AO. Our results are consistent with the results in the literature that demonstrate the presence of carotenoid and chlorophyll pigments in AO and OO [36,37]. The variability in pigment contents could be explained by the influence of several factors such as roasting of seeds, temperature, time, extraction process, and storage conditions [36].…”

“…AO also contains unique sterols such as schottenol and spinasterol [34], which are not found in OO [33]. Both oils have polyphenols with antioxidant potential [35] and contain minor compounds such as carotenoids and chlorophylls [36]. To ensure the protective quality of AO and OO, we characterized both oils and then evaluated their antioxidant potential.…”
