In the present research, an orange extract (OE) was obtained and encapsulated in a zein matrix for its subsequent physicochemical characterization and evaluation of its antioxidant capacity. The OE consists of phenolic compounds and flavonoids extracted from orange peel (Citrus sinensis) by ultrasound-assisted extraction (UAE). The results obtained by dynamic light scattering (DLS) and scanning electron microscopy (SEM) indicated that zein nanoparticles with orange extract (NpZOE) presented a nanometric size and spherical shape, presenting a hydrodynamic diameter of 159.26 ± 5.96 nm. Furthermore, ζ-potential evolution and Fourier transform infrared spectroscopy (FTIR) techniques were used to evaluate the interaction between zein and OE. Regarding antioxidant activity, ABTS and DPPH assays indicated no significant differences at high concentrations of orange peel extract and NpZOE; however, NpZOE was more effective at low concentrations. Although this indicates that ultrasonication as an extraction method effectively obtains the phenolic compounds present in orange peels, the nanoprecipitation method under the conditions used allowed us to obtain particles in the nanometric range with positive ζ-potential. On the other hand, the antioxidant capacity analysis indicated a high antioxidant capacity of both OE and the NpZOE. This study presents the possibility of obtaining orange extracts by ultrasound and coupling them to zein-based nanoparticulate systems to be applied as biomedical materials functionalized with antioxidant substances of pharmaceutical utility.

Sugarcane bagasse South Africa is an agricultural waste that poses many environmental and human health problems. Sugarcane bagasse dumps attract many insects that harm the health of the population and cause many diseases. Sugarcane ash is a naturally renewable source of silica. This study presents for the first time the extraction of nanosilica from sugar cane bagasse ash using L-cysteine hydrochloride monohydrate acid and Tetrapropylammonium Hydroxide. The structural, morphological, and chemical properties of the extracted silica nanoparticles was cross examined using XRD, FTIR, SEM, and TGA. SEM analysis presents agglomerates of irregular sizes. It is possible to observe the structure of nanosilica formed by the presence of agglomerates of irregular shapes, as well as the presence of some spherical particles distributed in the structure. XRD analysis has revealed 2θ angles at 20, 26, 36, 39, 50, and 59 which shows that each peak on the xrd pattern is indicative of certain crystalline cubic phases of nanosilica, similar to results reported in the literature by Jagadesh et al. in 2015. The crystallite size estimated by the Scherrer equation based on the aforementioned peaks for ca-silica and L-cys-silica for the extracted particles had an average diameter of 26 nm and 29 nm, respectively. Furthermore, it showed a specific surface area of 21.6511 m2/g and 116.005 m2/g for ca-silica and L-cys silica, respectively. The Infrared (IR) spectra showed peaks at 461.231 cm−1, 787.381 cm−1 and 1045.99 cm−1 which corresponds to the Si~O~Si bending vibration, the Si~O~Si stretch vibration, and the Si~O~Si stretching vibration, respectively. This confirms the successful extraction of nanosilica from sugar cane bagasse ash. TGA analysis has revealed that the as received sugarcane bagasse has high loss on ignition (LOI) of 18%, corresponding to the presence of the unburnt or partial burnt particles, similar to results reported by Yadav et al. This study has shown that sugar cane bagasse ash is a natural resource of silica which should be harnessed for industrial purposes in south Africa.

This study presents a novel packaging film based on whey protein isolate/κ‐carrageenan (WC) with red grape pomace anthocyanins (RGA) to investigate its impact on some qualitative attributes of emergency food bars (EFBs) for 6 months at 38°C. Increasing the RGA dose in WC films from 5% (WCA5) to 10% (WCA10) reduced hydrogen bonding between polymers and polymer homogeneity in the matrix according to FTIR and SEM. Tensile strength slightly declined in WCA5 from 7.47 ± 0.26 to 6.97 ± 0.12, while elongation increased from 27.74 ± 1.36 to 32.36 ± 1.25% compared to WC film. The maximum weight loss temperature (TM) increased by incorporating 5 wt% RGA from 182.95°C to 244.36°C, whereas TM declined to 187.19°C in WCA10 film. WVP and OTR slightly changed in WCA5 (from 7.83 ± 0.07 and 2.57 ± 0.18 to 8.41 ± 0.03 g H2O.m/m2.Pa.s × 10−9 and 1.79 ± 0.32 cm3 O2/m2.d.bar, respectively), but significantly impaired in WCA10 compared to WC film. WCA5 and WCA10 films had high AA%, 68.77%, and 79.21%, respectively. WCA10 film presented great antimetrical properties against Staphylococcus aureus with an inhibition zone of 6.00 mm. The light transmission of RGA‐contained films in the UV spectrum was below 10%. The WCA5 film effectively restrained moisture loss and hardness increment until the end of the storage period, which were 14.33% and 28.76%, respectively, compared to day 0. Antioxidant films provided acceptable resistance against oxidation to EBF treatment. Sensory panels scored WCA5 and WCA10 higher in overall acceptance with 5.64 and 5.40 values, respectively, while complaining about the hardness of OPP treatment. The results of this investigation demonstrated that incorporating RGA, preferably 5 wt%, into WC‐based film effectively improved the qualitative properties of EFB during the 6‐month shelf life. This film might be a promising alternative for packaging light and oxygen‐sensitive food products.
