Physically Cross-Linked Biopolymer Systems Based on Chitosan and Hydroxycinnamic Acids and Their Food Preservation Application Studies

Abstract: Production of physically cross-linked biopolymer systems (PCBS) is attracting scientific and industrial attention due to its proven potential for applications in, for example, food, food packaging, food preservation, pharmaceuticals, and cosmetic industries. Its production versatility allows obtaining products in the form of films, powders, lyophilized products, edible coatings, and gel beads, among others. This review presents different methods for obtaining, characterizing, and applying these PCBS designed a… Show more

“…In this context, the WCA refers to the measurable angle formed at the triple interface (solid/liquid/gas) between the solid surface and a tangential line to the water drop on that surface. [42][43][44][45] When this WCA is lower than 90°, the surface is considered hydrophilic. Hydrophilicity quantification of a surface is possible because the WCA variation is proportional to this property.…”

“…Chitosan of purity >99.9% is expensive and is used for the biomedical industry and wound dressing. , Chitosan is extensively used in cosmetics, , water treatment, , fertilizers, , and as a protein supplement in animal husbandry. It is used in food industries either as a packaging material or as a coating material to improve the shelf life of vegetables and meat products. , …”

“…It is used in food industries either as a packaging material 25−27 or as a coating material to improve the shelf life of vegetables and meat products. 28,29 Thin films of chitosan are brittle. Hence, to make them ductile and improve mechanical strength, several studies were made on using plasticizers such as glycerol, sorbitol, polyethylene glycol, or essential oils or fatty acids.…”
