Physical-Chemical Characteristics of Honey on Brazil

Abstract: The physicochemical characteristics of honey depend on many factors such as bee species, climatic aspects, physiological state of the hive and the vegetable species that serve the necessary nectar and pollen. The description of the physicochemical aspects of honey in Brazil becomes relevant to define the quality of Brazilian products, as well as regional aspects and species of bees influence the physical and chemical composition of honey. The objective of this paper is to describe the physicochemical quality o… Show more

“…Jam and jelly allow extended shelf life by evaporation concentration at temperatures close to 100 °C, acidic pH, and high concentration of soluble solids (Reis and Schmiele, 2019). These products have been prepared from yellow nanche pulp and have shown acceptable sensory characteristics and desirable nutritional attributes, with a shelf life of >12 months (Caballero Roque et al, 2012;Monteiro et al, 2015;Da Cunha et al, 2020).…”

“…As análises de méis são necessárias para dar certeza ao consumidor da qualidade do produto comprado e respaldar o apicultor quanto a excelência do produto por ele produzido e comercializado sendo que, as características físico-químicas dos méis dependem de muitos fatores como, espécies de abelha, aspectos climáticos, estado fisiológico da colmeia e espécies vegetais de onde é coletado o néctar e pólen (DAMASIA-GOMES et al, 2015).…”

“…Among Melipona species, M. fasciatus Smith, known as "Tiuba", has a docile behavior and is widely produced in Brazil for honey and propolis production (Martim et al, 2011;Damasia-Gomes et al, 2015). However, Apis mellifera L., and exotic bee at South America, occurs in every environment at this continent, but is less found at well conserved environments and amazon forest (Oliveira & Cunha, 2005 Melipona and others native species, once this species seems to be well adapted to competition (Oliveira & Cunha, 2005;Jones, 2013).…”
