Phospholipid‐ phospholipid interaction in soybean oil

Abstract: Phospholipid‐phospholipid interaction in soybean oil is described. Phosphatidylcholine was effectively removed from soybean oil by degumming (water hydration), whereas phosphatidylethanolamine and phosphatidic acid were hardly hydratable.
