“…They could exert antioxidant effects along the storage, where their content was reported to increase (Li et al ., 2022). The polymerisation of some compounds may be another responsible for this bioactivity as well as the antioxidant fibre present in these SGPs (Yang et al ., 2022).…”

“…The best inhibition was found after 1 month (IC 50 of 74.76 ± 0.05 mg/mL). This behaviour is correlated with the content of gallic acid [ r = 0.7856 ( P < 0.05)] and epicatechin [ r = 0.7612 ( P < 0.05)], maybe due to the polymerisation of these compounds along the time (Yang et al ., 2022). In addition, a correlation of 58.43% ( P < 0.05) was found with the AOA, suggesting the presence of other molecules than phenolic compounds involved in this bioactivity.…”

“…Kang et al (2009) further developed methods of synthesis for preparing resveratrol derivatives and analogues. 102 A Merrifield chloromethylstyrene resin (1) was bonded covalently to 4-hydroxybenzaldehyde (2), which was reacted with a Grignard reagent to shape a secondary alcohol (4). The substituted phosphonium ion (5) was produced by the secondary alcohol (4) for coupling with a second aryl aldehyde (6) through the Witting reaction.…”

“…Stilbenes are a group of nonflavonoid polyphenolic compounds with a basic 1,2-diphenylethylene skeleton as parent nuclei, widely present in many traditional herbs and in a few fruits such as grapes and berries. , Stilbenes, as a secondary metabolite are phytoalexins, produced in the process of plant growth to defend against pathogen attacks and other stresses. Natural stilbenes are mainly a complex class of biodiverse compounds formed by oxidation, methylation, glycosylation, isomerization, methoxylation, and polymerization.…”

“…Nevertheless, in a certain way, it can be said that this activity of GP as a cardiometabolic health-promoting ingredient would begin in the gastrointestinal tract as GP components (i.e., (poly)phenols and fiber) undergo extensive catabolism, mainly by the action of the intestinal microbiota, that gives rise to low-molecular-weight bioactive compounds that can be absorbed and utilized by the body [ 20 ]. Dietary (poly)phenols are metabolized by the gut microbiota and concentrated in the gut lumen, reaching biologically relevant concentrations that allow them to exert local beneficial effects [ 21 ].…”
