The development of products with resource-saving technologies, increased nutritional value, expanded range and balanced composition remains relevant. In this research, the chemical composition of red sauce with rapeseed cake of different weights was studied for the presence of fatty acids and the energy value of the product. The effectiveness of a herbal supplement as a source of saturated and unsaturated fatty acids, body energy, and bone density was estimated. The research was conducted in accordance with Regulation (EU) 1169/2011. Fatty acids were detected in different samples -control, with 2.5% (P1), 5% (P2), 7% (P3) of rapeseed cake. It was found that 5% of rapeseed cake in the red sauce provided an optimal increase in unsaturated fatty acids. Such composition helps to reduce the deficiency of unsaturated fatty acids, supply the body with energy, and increase bone density. According to the results obtained, when adding rapeseed cake in a volume of 5%, the energy value decreases, which allows to include the red sauce in a daily diet without threatening to increase the daily energy consumption of adolescents. Data on the chemical composition of rapeseed meal provide an opportunity for its further use in the production of healthy foods.

The use of rapeseed oil and flour obtained by processing of peeled rapeseed kernels as a source of valuable nutritional and biologically active substances needed in the diet of the elderly to maintain their health and active longevity is justified. A sugar cookie formula with the use of rapeseed products has been developed. The technology of cookies which allows one to obtain a dough with the necessary properties and finished products of the required quality is proposed. The consumption of cookies will increase the level of satisfaction of the body’s requirements for a complete protein, polyunsaturated fatty acids, including omega 3, dietary fiber, B vitamins and tocopherols, dietary minerals such as potassium, calcium, magnesium, phosphorus, sulfur, iron, copper, zinc, manganese, cobalt and others. The use of rapeseed flour will enrich cookies with such minor nutritional components as rape indoles, which have antioxidant and antitumor activity, stimulating the detoxification processes of the body. The introduction of rapeseed products into the composition of sugar cookies allows us to consider it as a gerontological product that slows down the aging process.

Биологически активные вещества растительного происхождения и их комплексы с другими природными ингредиентами находят все более широкое применение в нутрициологии и медицине в качестве эффективного средства коррекции обменных нарушений и сохранения здоровья. Особое внимание уделяется использованию местных сырьевых ресурсов, учитывая их доступность и эффективность, обусловленную эволюционным «сожительством» с населением данного региона и формированием индивидуального нутриома. Разработана новая форма специализированного продукта в форме БАД. Дана характеристика исходных ингредиентов для научного обоснования качественного и количественного состава рецептуры, включающей, в процентах: экстракты клюквы – 5,0; корни лопуха – 1,0; надземные и подземные части сабельника болотного – 2,0; природную соль озер (Эсобел) – 5,0; пищевой сорбит – 87,0. Определены регламентируемые показатели качества гранулированной формы БАД, содержащей, %: растворимость – не более 10,0; массовая доля влаги – не более 1,0; липиды – не менее 0,05; полифенольные соединения в пересчете на танин – не менее 0,7; сумма органических кислот в пересчете на яблочную – не менее 1,5; магний – 0,3. Получены медицинские доказательства эффективности путем включения БАД в физиопроцедуру 75 больных, имеющих язву двенадцатиперстной кишки (ДПК) в фазе затухающего обострения с характерной клинической картиной. Отмечены нормализация двигательной активности желудочно-кишечного тракта, кислотности желудочного сока, репаративных процессов оболочки желудка и ДПК с наличием стойкой ремиссии в течение 2 лет. Рецептура и технология апробированы на предприятиях компании «Биолит» в условиях внедрения международных стандартов Системы менеджмента, что обеспечивает стабильность качества и конкурентоспособность.
