Abstract: Determinou-se quantitativamente, por cromatografia gasosa, o teor colesterol de ovos enriquecidos com ácidos graxos polinsaturados ômega-3 e de ovos comuns disponíveis no mercado de Belo Horizonte/MG. Foram analisadas duas marcas de ovos comuns e duas de ovos enriquecidos com cinco repetições por amostragem. Não houve diferença entre os níveis de colesterol para os tipos de ovos estudados.
