Osmotic Dehydration of Cassava Cubes: Kinetic Analysis and Optimization

Abstract: The present work had the objective of studying the osmotic dehydration process of cassava cubes (ManihotesculentaCrantz.) in ternary solutions containing water, sucrose, and sodium chloride.
