Abstract:Optical studies of Langmuir monolayers of simple amphiphiles such as fatty acids and esters by polarized fluorescence microscopy and Brewster-angle microscopy reveal a large variety of textures including stripes, stars, and spirals that closely resemble textures observed in liquid crystals.
