Abstract:Sucrose and inulin were investigated in this study as stimulating agents of bacteriocin production by Pediococcus pentosaceus ATCC 43200 when they were combined with glucose. When such a microbial strain was grown in glucose-based MRS medium, without additional supplements, it reached higher maximum cell concentration (2.68 g/L) and generation time (2.17 h), but lower specific growth rate (0.32 h-1) than in the same medium supplemented with 1.0% of both ingredients (2.53 g/L, 1.60 h and 0.43 h-1 , respectively… Show more
