Optimization of AOT reversed micelle forward extraction of 7S globulin subunits from soybean proteins

Abstract: The work attempted to study on separating the a 0 , a and b subunits of 7S globulin from soybean proteins by reverse micelles. The effects of six single factors (W 0 , time, temperature, pH, surfactant concentration and salt solution species) on three subunit partitioning were discussed. The main influence factors (time, temperature and surfactant concentration) were optimized by the response surface test (Box-Behnken design, three factor three level) in order to optimize the forward extracting three subunits … Show more

“…7S and 11S were important components of soybean protein, and the 7S could significantly improve the emulsion properties of soybean protein (Fukushima, 2001). AOT reverse micelle extraction had significant effect on the extraction efficiency of α, α', and β subunits of 7S, which was contributed to the functional properties of 7S (Zhao, Zhang, Liu, & Sun, 2018b). The effects of reverse micelle extraction on the structure properties of 7S and 11S will be further studied.…”

“…Reverse micelle extraction has been applied to purify proteins and attracted much attention in the food industry for its high selectivity and easy preparation (Mohd-Setapar et al 2014;Zhao et al 2018). Reverse micelles are thermodynamically stable nanoscale aggregates in which a surfactant is dissolved in an organic solvent, and the concentration exceeds the critical micelle concentration (Pe ´rez et al 2014;Tonova and Lazarova 2008).…”
