Oligomerization Mechanisms of Tea Catechins Involved in the Production of Black Tea Thearubigins

Keigo Hashiguchi,
Sena Teramoto,
Kohei Katayama
et al.

Abstract: Thearubigins (TRs) are chemically ill-defined black tea pigments composed of numerous catechin oxidation products. TRs contain oligomeric components; however, the oligomerization mechanisms are poorly understood. The comparison of the 13C nuclear magnetic resonance (NMR) spectra of TRs with different molecular sizes suggested the participation of A-ring methine carbons in the oligomerization. Crushing fresh tea leaves with phloroglucinol, a mimic of the catechin A-rings, yielded the phloroglucinol adducts of t… Show more

“…Theanine is one of the important C/N metabolites, and the application of exogenous nitrogen can effectively increase the content of theanine [ 31 , 32 ]. Tea polyphenols, caffeine, antioxidants, refreshing and cardiovascular protection, and other health effects [ [33] , [34] , [35] , [36] ] are also important tea flavor substances, mainly reflected as ' astringent ' and ' bitter [ [37] , [38] , [39] ]. Cao et al inoculation of microbial fertilizers in acidic soils significantly increased the content of substances such as total amino acids, total proteins, and total sugars under greenhouse conditions [ 40 ].…”

“…Various catechin oligomers have been discovered, including complex products with a high molecular weight, such as the antimicrobial ellagitannin sanguiin H-6 (C 82 H 54 O 52 , Mw: 1871.3 g/mol) active against methicillin-resistant Staphylococcus aureus (MRSA) [9,10]. Oligomeric polyphenols can be found in plants, such as catechin oligomers identified in black tea [11,12] and resveratrol tetramer and pentamer found in Dipterocarpaceaeous plants [13]. Resveratrol hexamer and even an octamer (upunaphenol Q) have been identified [14,15].…”
