This study evaluates the influence of crop seasons, cultivation regions, and traditional agricultural practices on the occurrence of F. proliferatum and A. flavus in the rice chain in the Mekong Delta, Vietnam. A survey on pre- and post-harvest practices was performed from 2017 to 2019 in parallel with sampling. Results showed that F. proliferatum (36.3%) and A. flavus (10%) were predominantly present throughout the rice chain. These fungi frequently occurred in winter–spring and autumn–winter crops in Can Tho paddy. Especially, F. proliferatum appeared both on the field and during transportation (50–100%), while A. flavus presented at all stages (10–33%). The occurrence of F. proliferatum reduced 70–27% after drying, depended on the seasons, compared to field and transportation stages and could not be detected anymore at further stages. Applying poor pre-harvest agricultural practices such as the use of certain varieties (Jasmine, DT8 varieties), combination of fertilizers (organic–inorganic), fields with crop debris, unhygienic boats, and delayed drying time of 8–12 h or 12–28 h resulted in an increase in fungal contamination on paddy. This study provides a detailed description of fungi contamination in crop seasons, cultivation regions, and agricultural practices, which may help in understanding the fungal dynamic and allow identification of good agricultural practices to mitigate the fungal contamination and potential mycotoxin production.

Rice is part of many people's diet around the world, being the main energy source in some regions. Although fewer reports exist on the occurrence of mycotoxins in rice compared to other cereals, fungal contamination and the associated production of toxic metabolites, even at lower occurrence levels compared to other crops, are of concern because of the high consumption of rice in many countries. Due to the diversity of fungi that may contaminate the rice food chain, the co‐occurrence of mycotoxins is frequent. Specific strategies to overcome these problems may be applied at the preharvest part of the crop chain, while assuring good practices at harvest and postharvest stages, since different fungi may find suitable conditions to grow at the various stages of the production chain. Therefore, the aim of this review is to present the state‐of‐the‐art knowledge on such strategies in an integrated way, from the field to the final products, to reduce mycotoxin contamination in rice.

A Surface Plasmon Resonance Sensor for the Detection of Deoxynivalenol Using a Molecularly Imprinted Polymer

The aim of the present work was to investigate the feasibility of applying the molecular imprinting polymer technique to the detection of the mycotoxin deoxynivalenol (DON) using a surface plasmon resonance (SPR) transducer. A molecularly imprinted polypyrrole (MIPPy) film was prepared via electropolymerization of pyrrole onto a bare Au chip in the presence of a template DON molecule. Atomic force microscope SPR analysis showed that the MIPPy film was deposited homogeneously on the Au surface, with a thickness of 5 nm. The MIPPy–SPR sensor exhibited a linear response for the detection of DON in the range of 0.1–100 ng/mL (R2 = 0.988). The selectivity efficiency of the MIPPy film for DON and its acetylated analogs 3-ADON and 15-ADON was 100, 19, and 44%, respectively. The limit of detection for DON with the MIPPy–SPR for a standard solution was estimated at >1 ng/mL. These results suggest that the combination of SPR sensing with a MIPPy film as a synthetic receptor can be used to detect DON.
