Abstract: ResumoAs partes aéreas da mandioca, representadas pelas folhas, hastes e caules, constituem-se como resíduos agroindustriais por serem desperdiçadas na colheita das raízes. Esse material possui valor protéico, vitaminas e mineiras, propiciando sua utilização como suplemento alimentar nas indústrias alimentícias.
