The long grain rice cultivars belong to the indica subspecies that has the characteristic of high amylose content (over 25%) that gives the grains softness, quick cooking, good grain expansion and dry grains after cooking (Jeong, 2020;Bassinello;Carvalho, 2021) The class of long-thin grains (47.62%) that predominates among the varieties studied, that includes the varieties: Bacaba, Baixinho, Buriti, Edinho, Fininho Branco, Fininho Vermelho, Macuxi, Marabá, Vermelhão and Vital, is preferred by the Brazilian consumer because it has the characteristics mentioned above, that is a reflection of the international market that produces 80% of this type of rice (Ferreira;Wander;Silva, 2021;Ferreira et al, 2005) The descriptor for the pericarp coloring is unanimously white (100%) a very important fact since the market has a preference for white rice that facilitates commercialization, either on the domestic or international market (Godal et al, 2021).…”
