Nutrition is considered to be one of the main factors ensuring vital activity. Its completeness and compliance with metabolic needs are especially important for people in emergencies. Therefore, consuming (using) food products for special medical purposes has become quite widespread. It has been established that this product market segment is showing stable growth at all levels. It is explained both by the general tendency to improve the conditions of treatment and recovery, the use of functionally oriented products, and the growing concern of the public about their own health as the result of the spread of the coronavirus infection COVID-19, and general trends towards increasing the average age of the world population. The last factor is especially relevant for the countries of Europe. It was analyzed that in 2023, the global market volume of food products for special medical purposes constituted more than USD 14 billion, and by 2030, it should have exceeded USD 19.5 billion with an average compound annual growth rate (CAGR) of nearly 5.8%. The main world producers of these products are international companies Nestle, Danone Nutricia, Abbott, Bayer, Mead Johnson, Lenus Pharma, Gruppo FarmaImpresa (GFI) and Galen Limited. It has been established that in 2023, the volume of the European market for the researched products exceeded the figure of USD 3.3 billion, and the average CAGR over the past 3 years was almost 5.6%. The state of the market for the studied products in Ukraine is insignificant, and makes up almost 0.1% of the global one. However, this market has significant prospects for growth in the case of an increase in the population’s income. It is forecasted that the main current trends in the market development will include the assortment diversification of such products, in particular, targeted at meeting the needs of representatives of aging groups and groups with various additional diseases. With regard to the Ukrainian market, there should be an additional focus on ensuring the domestic production of the analyzed products.

In order to guarantee the proper quality of medical products and medicines, the mandatory application of Good Manufacturing Practices (GMP) norms in almost all countries is provided by law. Given the importance of nutritional provision of human portrebs in emergencies, the use of GMP is also relevant in the production of food products for special medical purposes. The object of research is the methodological base, approaches, and norms of GMP application in the manufacture of this product category. It is determined that the implementation of these practices is ensured mainly through measures for raw materials, equipment, personnel, premises, compliance with hygienic requirements, journaling, internal control, response to complaints, monitoring, traceability, product recall. It is established that the basic principle of GMP application is the production of products that will meet the purpose and provisions of the registration dossier. At the same time, ensuring product quality is a comprehensive concept of ensuring compliance with properties, combining organizational measures at all stages. This activity should be carried out taking into account risk-oriented thinking based on the control of raw materials, packaging, testing in the production and release of goods to the declared characteristics, ensuring high competence of personnel, process and analytical validation. Recommendations on a set of measures aimed at introducing good manufacturing practices at enterprises producing food products for special medical purposes have been compiled and presented. The essence of these recommendations is to identify technological processes, monitor their implementation, provide the necessary resources and measures, establish the process of documenting actions, validation at all stages, including self-inspection

The article describes the features of the interaction of microwave energy with food raw materials and food products and conducts an analytical review of the application of microwave processing for various technological processes in the food industry and hotel and restaurant business. The paper examines the peculiarities of the interaction of microwave energy with food raw materials and food products and gives an overview of the application of microwave processing for various technological processes in the food industry and the hotel and restaurant business. Despite the number of scientific works devoted to the topic of technological equipment, in particular, microwave heating, in Ukraine this is an insufficiently illuminated topic that requires research, taking into account the current conditions in the national economy. To create more rational technological processes, a combination of microwave heating with other energy carriers is used: steam, hot air, infrared heating, heated fat, vacuum, ultrasound. Heat treatment of food products in the cooking mode is divided into two stages: heating to a set temperature and maintaining this temperature until complete culinary readiness. The stepwise microwave heating method is also used, which ensures a high heating rate and avoids uneven heating of individual areas of the processed products. In this way, the possibility of temperature redistribution is ensured through the thermal conductivity of the material during its thermostating. One of the features of microwave processing is the possibility of rapid and relatively uniform heating of the product throughout the entire volume, which by its nature depends not so much on the thermophysical characteristics of the heated object, but on the presence of moisture in it and the nature of its distribution by volume. The ability of dielectric heating is effectively used in the food industry when defrosting products. Defrosting in the microwave field allows you to speed up the process tenfold and to a large extent preserve the quality of food products. Good results are given by combined methods of defrosting microwave heating with ultrasound, as well as with the method of blowing the product with cold air. The use of microwave heating with other physical methods and energy carriers makes it possible to intensify technological processes, reduce the cost of finished products, as well as increase the nutritional and biological value of raw materials, semi-finished products and finished products
