Nutrition marketing of honey: chemical, microbiological, antioxidant and antimicrobial profile

Abstract: Honey and all bee products have very good biological and chemical properties. They have been used in medicine for a long time. In our study we evaluated twenty polyfloral honey samples, the first ten were commercial honeys from a selected supermarkets with country of origin indicated "blend of EU and non-EU honeys" and represented imported honey. The second ten honeys were from a local beekeepers (Nitra region) and represented the Slovak origin. The aim of the study were to analyze chemical, microbiological, a… Show more

“…A significant number of the apiaries of Odesa, Mykolaiv, Kherson, and Zaporizhzhia regions, which produced 14,106 tons of bee honey in 2021, which is 508 tons less than in the Northern part of the country, operate in the Southern part of Ukraine [38]. The honey from the beekeeping of 8 districts were included in the study for the pesticide residues, in particular, from 4 districts of Odesa and 4 districts of Mykolaiv region, 3 districts from Kherson region, and 1 district from Zaporizhzhia region.…”

“…The total honey it produces is much lower than in other regions. An exception is the Khmelnytskyi region, where a fairly large amount of honey is produced -5,437 tons out of 10,059 tons [38], obtained in the region as a whole in 2021. Therefore, the largest honey samples were taken from the beekeeping of 3 districts of the Khmelnytskyi region in the amount of 9 samples, corresponding to 5.8%.…”

“…For this purpose, many physical and chemical properties are examined to determine the quality of honey. Compared to multi‐floral honeys, mono‐floral honeys have high commercial value due to their appreciated flavor and aroma, as well as their unique pharmacological characteristics [6].…”

“…Specifically, bees have been shown to produce a diverse array of honeys with proteins called apidaecins [ 4 ]. These proteins are significant because they have been shown to have antibacterial properties against gram-negative bacteria including E. coli and P. aeruginosa [ 4 , 5 ]. Apidaecins act as a part of the immune system of the bees.…”

“…As noted, honey production is highly unique due to variations in bee species and flower type. However, it is also observed that the sourcing of honey can also play a role in its composition, specifically looking at locally sourced honey versus commercially produced honey [ 5 ]. Research has shown that biological and chemical profiles can be significantly different between local and commercial honey.…”
