Alzate, Dárdano, Olivares, and Álvarez (2012) conducted an evaluation of the training of nutritionists in eight South American countries, and found there are significant gaps in their curriculum model. It showed that less than half of the institutions provided instruction on "design and validation of nutrition education materials" (Alzate et al, 2012, p.
