Abstract:In this paper, the optimal protease and enzymatic conditions in the production of angiotensin I-converting enzyme (ACE) inhibitory hydrolysates derived from oil-tea seed meal (OTSM) protein was screened and optimized, respectively. The maximum ACE inhibition (ACEI) was obtained by alcalase hydrolysates in the screening experiment. Therefore, the alcalase was employed as enzyme in the optimization assay.
