Abstract:BACKGROUNDThe investigation of ultraviolet (UV)‐induced fluorescence imaging coupled with machine learning was conducted to non‐destructively detect the total volatile basic nitrogen (TVB‐N) of frozen‐whole‐round tilapia (FWRT) during freezing and thawing (F‐T).
