Nitrate Analysis in Meats; Comparison of Two Methods

Abstract: A high performance liquid chromatographic method (HPLC) was compared to cadmium reduction-Griess (Cd-Griess). Nitrate and nitrite were measured in fresh and cured meats. Nitrate levels by HPLC ranged from 6.2 to 26.7 nmol/g in fresh meats and from 124 to 3018 nmol/g in cured meats. Nitrate contents by HPLC were significantly higher (~~0.05) than those by Cd-Griess. Small amounts of nitrite (O-7.3 nmol/g) were detected in fresh meat samples by Cd-Griess. Results were similar to those used by the National Academ… Show more

“…Nitrate in the extract was assayed following the Griesscadmium reduction method (Elliot and Porter, 1971), while nitrite was assayed NITRATE AND NITRITE IN SELECTED VEGETABLES IN JORDAN directly without going through the cadmium reduction step. Nitrate concentration was calculated by subtracting the direct nitrite content from the cadmium-reduced nitrite value (Sanderson et al, 1991) read from a sodium nitrite standard curve. The nitrate added for recovery control was subtracted from each nitrate value.…”

“…Serum NO concentrations were measured indirectly in terms of nitrate by colorimetric assay (Boehringer, Mannheim, Germany) [21,22]. In order to minimize exogenous nitrate source, each subject was given a list of foods rich in nitrate and told to avoid them for 3 days before blood was taken [23].…”

“…The simultaneous determination of nitrite and nitrate concentrations is of rapidly increasing interest for the food industry . The majority of the methods involve spectrophotometric procedures , , , . Among these, the cadmium column reduction method is the most widely used (Cd column−Griess method).…”
