New Directions in Biotechnology of Dairy Raw Materials Processing Using Yeast

Abstract: The possibility of using yeast to obtain functional additives and products from dairy raw materials is shown. The main attention is paid to biotechnologies of prebiotics galactooligosaccharides and lactulose, as well as new types of probiotic dairy products.
