Myrosinase Activity in Bacteria as Demonstrated by the Conversion of Progoitrin to Goitrin.

Abstract: Progoitrin is a thioglycoside present in high concentration in the seeds of most Brassicaceous plants and in the edible parts of some, particularly rutabaga and turnip.
