Mycotoxin incidents associated with cereals: lessons learnt and risk reduction strategies

Abstract: This paper explores the occurrence and impact of mycotoxins linked to cereals and their indirect impact on human food safety. Epidemiological cases are used to evaluate the impact of mycotoxins on food and feed supply chains. It is shown that mycotoxins pose significant problems and, the implementation and enforcement of legislation, and the development of efficient supply chain strategies including private standards to reduce the risks of contamination and subsequent health issues are considered. Further, the… Show more

“…Contamination by pathogens occurs due to the presence of bacteria and strains causing food poisonings, such as Salmonella, Staphylococcus aureus, Shigella sonnei, Listeria and Escherichia coli (Potter et al, 2012). Mycotoxins and biotoxins are substances that are toxic substances produced by various fungi that can contaminate the food supply chain (Baines et al, 2018). On the other hand, recalls for transmissible biological diseases occur due to infectious agents such as viruses and prions, such as foot-and-mouth disease and avian flu (Whitworth et al, 2017) Operational…”

“…Wheat flour is the main component of bread, which is a traditional daily intake in almost all meals. A low-level exposure over time can result in chronic toxicity, which can be mistaken for other diseases (Baines et al, 2018). Further studies are therefore required to determine the total of aflatoxins and prevalence of other mycotoxins in wheat and wheat products (flour, bread, etc.…”

“…Mycotoxins can be present on agricultural commodities in the field, before harvest, postharvest, during processing, packaging, distribution, and storage. Inappropriate or a lack of storage conditions and other environmental factors such as high temperature, high relative humidity and moisture may trigger mycotoxin formation (Cotty & Jaime-Garcia, 2007;Yeni et al 2016;Baines et al 2018;Zinedine & El Akhdari, 2019) especially if there is inadequate cleaning and handling processes and post-harvest drying techniques (Kabak & Dobson, 2017;Schmidt, 2017;Baines et al 2018). Mycotoxins are more of a concern in warmer, subtropical and tropical areas than in the temperate areas of the world (Wilson et al 2002).…”
